Camp style Ratatouille

Ingredients:

3 Capsicums (one red, green and yellow)...add more if desired.
1 Large Brown Onion
1 large Zuchinni
2 tins of crushed tomatoes
1 cup of Mushies
1 tin of stock or water
Assorted herbs for taste


Method:

Chop everything up into chunky pieces, fry up onions until golden brown, add vegies, crushed tomatoes and stock and bring to the boil. Add flavourings like herebs, etc... (I usually add tabasco) Simmer for 3+ hours, stirring occaisionally in preferably a cast iron pot over a few beers, play some badminton, have a few more drinks a swim or whatever and serve with cous cous or plain rice therafter...or after you are pissed as a parrot.

The secret to this recipe is the time you cook it, the capsicums and low simmering heat. The longer the better and the Capsicums being the main ingredient for flavour. You can substitute Stock for water if you wish and add other favourite vegies also. Eggplant and fresh beans are a good choice.

It's an easy dish that doesn't have you slaving over a hot stove and perfect for those campire nights around the fire.
