View Full Version : The best dinner you could hope for

A few months ago i watched one of the 4wd monthly dvd's and Roothy was cooking up one heck of a raddle mix for the blokes. It kinda inspired me so last week on a trip i gave a similar mix a go. I do confess i diviated somewhat from what roothy had come up with but i have to tell you it was amazing and all that shared in it couldn't get enough so i thought i would share the recipe here. Honestly it is no big deal but it works.

An open fire it is the best with a camp oven.

1. Cook one or two onions diced in olive oil, one tea spoon of garlic and one teaspoon of ginger until onions are almost browning.
2. Add sliced lamb (600 grams if you are serving 2-3 people). And cook until just browning.
3. Then add one or two cans of whole skinned or diced tomatoes. Mix throuh well.
4. then add diced zicini, squash, mushrooms (and what ever other vegi you feel fits well.)
5. then add some curry powder and chicken stock. (I know it has lamb in it but chicken stock works well.)
6. Then pour in some red wine and mix through.
Stir every few minuted and leave for about 20-30minutes to cook in oven.

I promise you will be in heaven when you sit back and enjoy this with a nice glass of red, some bread around a nice fire.

not been camping for a few months and had just removed a pool from my back lawn id set up a campfire where the pool has left a crcle of dead lawn, so far in the last week my missis hasnt had to cook a meal for 5 nights a week for the last 2 weeks! the above mentioned recipe is the next on my list! i just gotta work out what to do with my campoven cause i left it too long on the fire on the weekend and it has burnt stuff inside it all caked on!

Hey talking of which, wnyone else got any good ones?

Here's my most recent one.

Warm 1 teaspoon oil in a heavy based saucpan, add 1 thinly diced onion and a crushed clove garlic, saute for about 10 mins.
remove onion and set asside, add a bit more oil. Season and pan-fry 2 chicken breast for about 7 mins each side.
When chicken is nearly cooked add 1 tbsp malt vinegar, 1 1/2 tbsp tomato sauce 1 tbsp soy sauce and 1/2 tbsp brown sugar and cook over high heat for about 1 min.
return onion to pan, cover and cook for about 2 mins.

Can serve with rice or just with vegies or whatever. I also put all the vinegar, soy, tomato sauce etc in one container before I left so that was all one move. came up a treat.
