A few months ago i watched one of the 4wd monthly dvd's and Roothy was cooking up one heck of a raddle mix for the blokes. It kinda inspired me so last week on a trip i gave a similar mix a go. I do confess i diviated somewhat from what roothy had come up with but i have to tell you it was amazing and all that shared in it couldn't get enough so i thought i would share the recipe here. Honestly it is no big deal but it works.
An open fire it is the best with a camp oven.
1. Cook one or two onions diced in olive oil, one tea spoon of garlic and one teaspoon of ginger until onions are almost browning.
2. Add sliced lamb (600 grams if you are serving 2-3 people). And cook until just browning.
3. Then add one or two cans of whole skinned or diced tomatoes. Mix throuh well.
4. then add diced zicini, squash, mushrooms (and what ever other vegi you feel fits well.)
5. then add some curry powder and chicken stock. (I know it has lamb in it but chicken stock works well.)
6. Then pour in some red wine and mix through.
Stir every few minuted and leave for about 20-30minutes to cook in oven.
I promise you will be in heaven when you sit back and enjoy this with a nice glass of red, some bread around a nice fire.
